- 500g chicken thighs, chicken breast or firm tofu

- 400ml coconut milk
- 1 red pepper, sliced
- 150g green beans or mangetout
- 1 tsp brown sugar
- 1 tbsp fish sauce or soy sauce
- Juice of 1 lime
- Fresh basil and cooked jasmine rice, to serve
