- 2 eggs, lightly beaten
- 300g chicken, prawns or firm tofu
- 2 garlic cloves, finely chopped
- 150g beansprouts
- 3 spring onions, sliced

- 2 tbsp fish sauce or soy sauce
- 1 tbsp brown sugar
- Roasted peanuts, lime wedges and chilli flakes, to serve
